FEZZIWIG'S Balsamic Vinegars and Extra Virgin Olive Oils have been a huge hit at our store since we opened in the fall of 2007. Since then, we have continued to expand our selection. If sales in our store do not meet our expectations after six months, we may drop a balsamic or olive oil in favor of a new vareity.
All of our Balsamic Vinegar comes from Modena, Italy. one of only two regions in the world that produce this amazing condiment. Modena is not only famous for their Balsamic Vinegar but also for the famous Ferrari, Lamborghini and Maserati automobiles and world renowned operatic tenor Luciano Pavarotti. Balsamic Vinegar dates back to the year 1046.
Our Four Leaf Grade balsamic vinegar is made from a reduction of pressed Trebbiano and Lambrusco grapes. The resulting thick syrup, called mosto cotto in Italian, is subsequently aged for a minimum of 12 years in a battery of seven barrels of successively smaller sizes. The casks are made of different woods like chestnut, acacia, cherry, oak, mulberry, ash and juniper. True balsamic vinegar is rich, glossy, deep brown in color and has a complex flavour that balances the natural sweet and sour elements of the cooked grape juice with hints of wood from the casks.
